Elohim Sal Rosada Chaqueña, Bolivian Pink Mineral Salt Crystals from the Chaco, Coarse, Not Iodized, 500g
Sal Rosada Chaqueña comes from the Gran Chaco, the vast dry lowland plain that stretches across southeastern Bolivia. The salt is drawn from ancient inland deposits, then dried and packed in crystal form rather than milled into powder, which is why the grains stay irregular and the color runs from pale peach to soft rose.
Bolivians reach for it the way cooks elsewhere reach for kosher salt. It seasons a pot of majadito, finishes grilled beef, goes into the dough for cuñapé, and sits on the table next to the llajua. Because the crystals are coarse, a pinch dissolves slowly and seasons more gently, which makes it forgiving in soups and stews.
Elohim is a small artisan food producer in Santa Cruz that packs the salt in its natural crystal state without anti-caking agents or bleaching. Expect some variation in grain size and color from bag to bag. That is the product, not a defect.
How to use it
Grind it in a mill for everyday cooking, or use the crystals whole as a finishing salt on steak, roasted vegetables, and sliced tomatoes. It also works in a salt shaker with a coarse-grind setting, and in brines where you want a slower dissolve.
Ingredients: Pink mineral salt.
